Sambousek is a Lebanese delicacy enjoyed most often as an appetizer or “mezze.”
What is Sambousek:
There are many different varieties of these crispy pies of savory cheese or organic beef
Sambousek (also spelled Sambousik and Sambousak) are mini savory pies filled with either spiced meat or savory cheese filling.
The Dough:
A pillowy soft crust and crispy bottom, due to long fermentation time for maximum flavor and the perfect crackly, chewy texture. A recipe that is mastered over the years by my lovely wife Dory.
The Filling:
• Beef – the beef in sambousek is precooked before being rolled up. We sauté the onions in butter, when golden brown we add in all the allspice, salt, black pepper and cayenne pepper. Then we add the organic beef and continue to stir, when done we add the pomegranate molasses.
• Cheese – Mozzarella cheese, Akawi cheese, parsley and onions and peeper.
When to eat:
You can eat Sambousek anytime you like. Warm it in the oven at 360℉ for 2 minutes. It is ready to eat when the aroma is calling your name.
Storing
The beef and cheese sambousek freeze extremely well, making them the perfect appetizer to order in advance and freeze for later use.
